scandi    flat bevel, no secondary — easy to freehand
flat      full taper, slices clean, easier to chip
convex    rounded bevel, toughest, hardest to sharpen

Pick by use

Carvers love a scandi for control. Kitchen work wants a flat grind. If you baton firewood or dig with your knife, a convex edge survives what the others won't.
